Pancakes
Late mornings and long runs (often dichotomous events) have one striking similarity. They both call for pancakes.
My favourite pancakes are buckwheat pancakes because the buckwheat flour gives them a nutty taste and additional boost of protein. There are so many pancake recipes out there, but I find the bread itself is more of a vessel for the toppings.
My favourite way to top my pancakes is with a big dollop of greek yoghurt, melted frozen berries, some chopped up nuts, and, of course, maple syrup.
Another good combination is yoghurt and honey with caramelised peaches or bananas. Basically just sprinkling a layer of sugar on the pan-side surface of the fruit and leaving it to melt. Yum.
